No, Retail POS does not map to the categories field.

Retail POS will publish a product to the Retail POS Uncategorized category in BigCommerce.

Any further customizations will need to be actioned independently on BigCommerce after the product(s) have synced. This will NOT break the sync between Retail POS and BigCommerce.
